Vegan Fudgy Shortbread
These are a vegan coconut shortbread with a fudgy, chocolate topping. Free from gluten, dairy and refined sugars.

Shortbread Base
  1. Place all your shortbread ingredients into your food processor and mix until you have achieved a crumbly but sticky texture.
  2. Pour your base into a parchment lined pan and press down into an even layer.
  3. Set aside or place in freezer to firm up.
Fudge Layer
  1. Place all of the ingredients into your food processor and blend until you achieve a smooth, creamy texture. Depending on the strength of your machine this could take several minutes. Make sure to stop and scrape down the sides to makes sure everything is mixed in well.
  2. Once mixed, pour your fudge layer over top of your base and spread out into an even layer.
  3. Place your shortbread into the freezer and allow it to firm up for about and hour or until it is slightly tacky to touch.
