Good morning lovelies!
This weekend was an absolute scorcher in the UK and not a cloud to be seen. Definitely the type of weather you don’t take for granted! My husband and I thought it would be a shame not to spend our weekend outside, so we decided to keep things low key exploring the shops nearby and cooling off with a fair share of iced coffees along the way.
One of the coffee shops we went to has just opened in our village and has a great selection of raw treats.
And I’m sure you know where this story is heading….
Obviously I had to try one.
And I did.
After careful consideration of their selection, I went for the raw bounty bar. Finishing it in seconds flat (obviously I was worried about it melting in the heat, LOL), I can safely say I was happy with my decision.
While licking my fingers clean, I remembered this recipe which I wanted to share with you.
The best way to describe these squares I would say is bounty bar meets shortbread. So if you like both of those, these will be a sure win.
They may not have the buttery flavour that traditional shortbread has but they do offer the crumbly texture that feels like they are melting in your mouth.
And the fudgy chocolate topping? I think I might just start putting this stuff on top of everything.
These are super easy to make. They are perfect for throwing together, popping in the freezer and forgetting about until you have a guest to impress or more likely my case a craving to kill.
I also tried something new with this recipe and made a video to go along with the post. Although it was completely out of my comfort zone, I had so much fun doing it!
