The past few days I’ve been in a baking mood and eager to try something new.
Then I remembered my sister telling me about these amazing brownies she made with sweet potatoes.
When she mentioned it something in my head just clicked, it sounded like such great idea!
Why had I not heard of this before?
I had a few sweet potatoes in my pantry so I thought it was the perfect chance to give these a go.
Now my first attempt at making these brownies was a massive fail.
I don’t know where my mind was when I was baking the sweet potatoes but they blew up.
Literally exploded in my oven.
For someone who loves to bake, I am constantly dropping, breaking, spilling and blowing up things.
So believe it or not, the explosion didn’t shake me up too much.
Oven cleaned and a trip to the grocery store later, I was back on track and ready to get my bake on.
Things went a little smoother this time around.
And I have to say these brownies were totally worth the drama.
Who would of thought something so moist and fudgy could be free from refined sugar, dairy and gluten free.
