Peanut Butter Brownie Slices

Peanut Butter Brownie BarsCan we all agree that this summer is FLYING by? I feel like it was June yesterday and we are already two weeks into August!! Can you believe it? Let’s just keep soaking up that sun and making memories while it lasts.

As I started to write this post I came to the realisation that recently a lot of my recipes (like this one) are based around chocolate and peanut butter.

Not that any thing is wrong with that, I mean is there any better combination?!

But there are so many other delicious ingredients to work with, I mean all of the summer fruits I could be using right now!!

So I am going to ban myself from making peanut butter and chocolate recipes. For now, (let’s be real) and by putting it here I’m making myself accountable.

Who knows, I might make something I like more!!!

I have a few thoughts brewing, which you will all hear about soon but I am welcoming allΒ ideas/suggestions.

But let’s get onto these brownie bars because they really are something.

The base is a black bean brownie that is super decadent and rich.

The top layer is a thick peanut butter frosting (kinda), which sits beautifully on top of the brownies like they were made for each other.

You can eat these right out of the fridge or heat them up if you prefer things on the gooey side.

Heck, you could even melt some chocolate and peanut butter to drizzle on top!

But I will warn you they are moreish. So just start with 3 and see how you feel from there.

Instructions
Brownies
  1. Pre-heat your oven to 180 Degrees Celcius.
  2. Place all your brownies ingredients into a food processor and blend until smooth. Stop to scrape down sides to make sure everything is thoroughly mixed in.
  3. Pour the brownie mixture into a pre-lined baking pan, smoothing out the mixture to make sure it is evenly distributed.
  4. Place in the oven and bake for 15 minutes. If you are unsure if it is done stick a toothepick in the centre, if it comes out clear the brownies are ready.
  5. Remove from oven and allow to cool.
Peanut Butter Layer
  1. Place all your incgredients in your food processor and blend until smooth. Stop to scrape down sides to make sure everything is thoroughly mixed in.
  2. The mixture should be relatively thick but still easy to spread.
  3. Pour the mixture onto your cooled brownies and place in the fridge to set. Leave for at least 1 hour (I like to leave overnight)
  4. Remove your brownies from the pan, cut into thick slices and serve.

    1. Aw that is a shame about your boyfriends allergy, is at all nuts or just peanuts?? I bet this would be really nice with almond or cashew butter too. Also black beans are a great alternative to flour, and you can’t taster them at all!

  2. Umm… Can you just deliver them? lol. I’ve never been a good baker. I can cook on the stovetop, but it’s like between the top of the stove and the bottom somehow my ability to create anything edible disappears. lol.

    1. I can certainly try posting them but not sure how they’ll look when they get to you, lol. These are super easy to make, I know you can do it!

  7. I’m in complete agreement with you on the sheer perfection of the chocolate/peanut butter combination! These bars look fantastic, and I really love the fact that they are a healthier alternative to traditional Brownies. I can’t wait to try them!

  8. I love that you used coconut oil and flour. Black beans?! That is a new one but I’m very intrigued for what flavor this would bring to the table. You can never go wrong with a PB & chocolate combo so don’t ban it for too long!

    1. The black beans tend to make the brownies quite dense but very moist and they are delicious! You definitely need to give them a try!
