This past month my schedule has really opened up.

Like many of you I’m sure,  when I realised all the free time I was going to have on my hands two things crossed my mind; a list of all the things I will finally be able to get done and how much I am going to use this opportunity to relax.

Neither of these have happened, yet.

Each day has been busy but if someone asked me what I’ve actually done I would struggle to tell you.

And the list seems to be growing instead of getting smaller.

Oh well.

It’s a good thing I get so much satisfaction out of scratching things off  lists because this one is going to take a while to get through.

Anyways, one thing that I am making an effort to stick to do is baking. I absolutely love to bake!

And what I love even more, is creating healthier versions of all my favourite classics.  Why not have your cake and eat it too?

So far I have made an Easter cake, a birthday cake and these cookie dough millionaire squares.

I am still perfecting the cake recipes to share with you guys, so keep your eyes peeled.

But I promise you these squares will not disappoint anyone with a sweet tooth!

Taking a bite out of the cookie dough millionaire squares

The cookie dough base nearly melts in your mouth as you bite into it.

The caramel is thick, holding everything together.

And while the chocolate topping is thin, it gives these squares a nice balance.

What I love the most is that they are free from gluten, dairy and refined sugars, as well as being vegan. So they can be enjoyed guilt free.

Cookie Dough Millionaire Squares
Instructions
Date Caramel
  1. While cookie dough is cooling, place all the caramel ingredients into your food processor and blend. Depending on the strengths of your food processor it may take a couple minutes to blend together but you when it has reached a thick, smooth consistency it is ready.
  2. Take the cookie dough out of the fridge and pour your caramel on top. Use your hands to smooth the caramel over the base. The caramel is VERY sticky so to prevent it from ending up all over your hands, make sure to slightly wet them before smoothing out into an even layer.
  3. Place back into the fridge to firm up.
Chocolate Topping
  1. Break the chocolate into smaller pieces in a bowl and add coconut oil.
  2. Place into a microwave and heat for 30 second intervals, stirring after every 30 seconds until chocolate is completely melted.
  3. Stir in almond butter, mixing until everything is well blended.
  4. Take the cookie dough and caramel mixture out of the fridge and pour the chocolate mixture on top.
  5. Place the bars back into the fridge to allow the chocolate to cool. Leave for at least 30 minutes.
  6. Cut into slices after chocolate has set.
Recipe Notes

* To avoid any lingering of chickpea flavour in your cookie dough make sure to rinse the chickpeas thoroughly and rub off the outer layer.
