Okay, so I know it has been awhile since my last post.

And contrary to what I said here, we ended up booking some VERY last minute tickets (like the day before ) and flew back to Canada for a short holiday.


I felt like I was going to explode with excitement when my husband called and told me we were going to fly home.

As a result, packing was more of a throw anything remotely summer-ish into the suitcase and make do. ( And by make do I mean raid mother/sisters closets and insist on going shopping when we got to Canada.)

We decided on the theme of spontaneity to surprise my parents, in hindsight we probably should have thought that one through a bit better because jet lag and exhaustion are never helpful when you are trying to plan a surprise. Never the less they were totally surprised and beyond excited to have us for a couple weeks. PHEW!

We went over with a completely open schedule but the days were filled fast and flew by.

With the biggest highlight being able to finally meet my sweet, little nephew.  I could not get enough cuddles with this adorable little bub!

My husband also got to experience his first Canada Day! Which I think was a highlight for me as much as it was for him. We decided to spend the day in Toronto which was full of markets, music …….. and a giant rubber duck!!

What the duck?!

Did anyone else have a chance to see the giant duck??

While we were away I tried to unplug as much as I could, allowing me to enjoy the short amount of time I had with my family and friends.

I have come back with so much inspiration for new recipes to try and a few other things I’m really excited to share with you over the next few months.

Which is where I am getting to with this post;

Peanut Butter Nice Cream Sandwiches

If you are unfamiliar with nice cream, it is a healthy ice cream alternative using frozen bananas as the base.  For this recipe, I went for a Chocolate nice cream which I have been known to have for breakfast on occasion. Lifes about balance right?

This time I decided to stick it in between some vegan peanut butter cookies instead and it was soooooo worth it!

If you have some old bananas stick them in the freezer RIGHT NOW, so you can make this delicious treat for the weekend.

This recipe is an easy to make vegan twist on ice cream sandwiches.

Peanut Butter Cookies
  1. Preheat your oven to 180 C (350 F).
  2. Place flax seed and water in a bowl and mix together. Set aside
  3. In a seperate bowl mix together coconut oil and sugar until it becomes a thick, creamy and slightly fluffy texture.
  4. Add in the flax egg, maple syrup and vanilla to the sugar mixture and mix well.
  5. Fold in remaining ingredients and mix until you have achieved a dough texture.
  6. Sprinkle flour onto your work surface and roll out dough. You only need 8 cookies so you should be able to make them pretty thick with the amount of dough made.
  7. With a cookie cutter, cut out your cookies and place them onto a cookie sheet lined with parchment paper.
  8. Place in the oven and bake for 8 minutes. When the are done they should be a golden brown and slightly crunchy on the outside.
  9. Remove from oven and let cool for about 5 minutes of cookie tray before transferring to a rack to cool completely
Chocolate Nice Cream
  1. Place all the ingredients in a food processor and blend until you achieve a smooth, creamy texture.
  2. Once blended line a cookie tray or a casserole dish with plastic wrap and pour your nice cream mixture into it. If you have an ice cream machine, pour in the mixture and follow the machines reccomended instructions.
  3. Place in the freezer and freeze for 4 hours or until nice cream is completely set.
  4. Remove from freezer and using the same cookie cutter you used for the cookies cut out nice cream slices and place between two cookies. Any sandwiches not eaten can be wrapped in parchment paper and placed back in the freezer to be eaten later.
